Sometimes its hard to find a good healthy breakfast when I’m always traveling. My dad recently started a lifestyle change for his health and he has been in the best shape of his life! I decided to follow his footsteps and read the book Dr. Gundry’s Diet Evolution. The reading so far has been enlightening and I am loving feeling healthier every day! I wanted to share my favorite healthy recipe for a good breakfast. This is great for traveling or when you need something quick right before work! This healthy shake ‘on the go’ is sooo tasty. Enjoy!
1½ cups ice cubes
1 cup unsweetened soy or almond milk
2 scoops chocolate whey protein powder or Rainbow Light Chocolate Protein Powder
1 tablespoon non-Dutch-processed cocoa powder
1 sprig fresh mint, or 1/8 teaspoon mint extract
1 tablespoon instant coffee granules, or 1 or 2 shots of cooled espresso
½ packet or ¼ teaspoon stevia or other no-calorie sweetener, or to taste (I use Monkfruit)
1 teaspoon agave syrup (optional)
Pulse all the ingredients in a blender on high until smooth. If the freeze is too thick, thin with small amounts of water while blending. Pour into a glass and drink immediately.
Any household blender should do – I’m using the Hamilton Beach Blender.
